Tim,
You may want to look at MIMEDefang which integrates with sendmail via the
MILTER API ... the mimedefang filter is 100% perl and gives you a ton of
flexibility to do as you want with it. so writing a filter to only send user
x's mail thru spamassassin should be pretty easy. it also allows you to
incorporate virus scanning and other flow control as well.
roaring penguin also has a commercial version of MIMEDefang (with tons more
features including web-based management GUI, etc already built/configured)
called Can-IT which is based around spamassassin as well.
