Can i whitelist the subject in some way, because it seems like this is the only thing that is common in every letter.
You can do that with a simpleish custom rule and give it a negative score.
header LOCAL_MY_LIST_SUBJECT Subject ~=/\bsome subject string\b/i score LOCAL_MY_LIST_SUBJECT -5.0
put it in your local.cf and be sure to run spamassassin --lint to check for typos.
