It depends on the size of the file. As Keith pointed out, it
doesn't hurt to relearn some spam; my concern was with
potential problems running sa-learn on a very large file.
If you are getting 50 spams a day, I don't see that it
would be a problem - I'm sure that sa-learn could easily
handle a file with 350 messages.  On the other hand, if you
have 500 spam emails daily, you would be configuring
sa-learn to  deal with 3500 messages, 2800 of which would
already have been learned.

I would suggest this alternate configuration:

Each day, immediately after running the sa-learn job on the
Spam folder, run a cron job to copy the contents of the Spam
folder into a 2nd folder (spam-week); then clear the
contents of the Spam folder itself. Now you have the backup
folder you want, plus a new, smaller folder for sa-learn to
handle each day.
