What would i need to stick in the user_prefs file, to delete all emails detected as spam?

That's impossible to do by configuring SpamAssassin.

SpamAssassin by itself is nothing more than a mail filter. It cannot change the delivery of the message, only the contents. It simply isn't in a part of the mail processing path where deletion, or even delivery to an alternate address, is possible.

You need to reconfigure procmail, or whatever other tool you have that is calling SA to delete the messages based on what SA decides.

Search the archives, there's been lots of procmail rules to autodelete messages marked as spam.
