Exchange 2000+ can be configured to do RDNS, it's just turned off by
default.  Go to Exchange System Manager, then drill down to the SMTP
Virtual Server and go to Properties, Delivery and Advanced.  Check
"Perform reverse DNS lookup on incoming messages."  I believe in 5.5
it's turned on by default.  I think the header then appears similar to
Postfix/Sendmail.  

But I do see how this would vary by MTA, point taken.
