If you run spamd on the system, you can see it adds log entries if
configured properly. You can parse the logs for those entries and do
what you want with the data. If you search the mailing list archives,
you can see there's some publicly available scripts people have created
for the purpose, such as http://www.gryzor.com/tools/#spamstats

I think a bug was also opened to SpamAssassin's bugzilla about having
some tools included with spamassassin for the purpose.
