I would like to fine tune my SA install. The problem I have is that a
lot of spam isn't listed as spam. I have a filter that moves ANY message
that has a spam score, you know, when the * is added to the header. This
tends to help me filter all spam, but a lot of normal messages get
caught too, especially mail from hotmail, and some mailing list posts.

How can I tell SA that this is NOT spam, and this is? I would prefer to
spoon feed SA, till it got the message (no pun intended!)

Probably the simplest thing to do is just use the bayesean learning features. Just feed the messages to sa-learn ---ham, and sa-learn --spam respectively. see man sa-learn for more info.

Otherwise, you can do your own custom rules, but that's really more than most people will need to do.
