If you use the default filter and mimedefang isn't crying about anything, the system is probably working fine... make sure you see SpamAssassin listed with 'mimedefang -features' output. You can try looking if SpamAssassin is leaving behind AWL or Bayes DBs. You can hack mimedefang-filter so it'll add some header to the mail that includes score/tests for the mail checked.
