leaving away SPAMASSASSIN=/usr/bin/spamc woudn't that cause the script not doing 
anything with the mail?
As suggested by the SA FAQ I tried a spamassassin -Dt < someMessage. It worked. So the 
error is not in SA.

Yes. I even restarted the daemon.

Yes, and I also see it in the mail's header.
