OK, then the question still begs an answer . . . how do I get the stuff out of Outlook 
and into sa-learn???

Headers do matter.. SA's bayes engine does learn from both header and body 
patterns.

This why there's no widespread "just forward mail to 
[EMAIL PROTECTED]" type script that works for all mailclients.
