It'll use all headers except those specified to be ignored.  Yes,
there are default headers that are ignored.  See the list in
lib/Mail/SpamAssassin/Bayes.pm.

it's a regular expression.  we already ignore 'X-DCC-\S{2,25}-Metrics', fyi.
