You need spamassassin and spamd on the "spam-checker-server" and a
client interface to spamassassin on the mail-server. For example I
would suggest a spamassassin-milter to interact with sendmail. You
could also have spamc (called from procmail) on mail-server machine.

In fact, I do exactly that on my setup here, and it works great.
Only problem is that you have more trouble setting up user-specific
configs, but you can handle that running spamd with --virtual-config
and -x.

I run that on SuSE 8.0 (both servers), so I have created rpms for that
setup:  http://www.baschny.de/linux/SuSE-8.0/RPMS/ search for
spamassassin and spamassassin-milter (one for the spam-checker server
and one for the mail-server). There is an included README.SuSE that
explains it a bit.
