Pretty straight forward actually.

The blue line is your total inbound mail.  The green is how much spam, and
the orange ( I think it is orange.  I'm color blind.) is percent of your
mail that is spam.  The reason it drops to 0 is that your maillogs rotate
every sunday at 4AM.  If you look in /var/log you will see maillog,
maillog.1, maillog.2, etc.  You are telling the monitor to look at
/var/log/maillog so that is what it does.  If you want to change that, you
need to modify logrotate in /etc.
