Does all the mail that originates inside your network have to be relayed
through your mail servers?  If so, consider setting up a separate
mail relay that doesn't run SpamAssassin and is only accessible from
within your network, then tweak your MX records so that internal users
automagically use the new relay.

After all, spammers can fake Received: headers with IP addresses from
inside your network (since you publically announced your intention to
pass on them 8-), and then you're no better off than when you started.
