I have to agree with Ross. I too have the Novell monkey on my back, to the tune of 50+ NW5.1 servers. But I don't use any of them to filter email.
If you can spare the hardware, a Un*x machine is your best option. I was able to build a box running RedHat 7.2, Qmail, Qmail-Queue-Scanner and Spamassassin in half a day. I was able to follow Milton Sullivan's instructions on the whole build process. Milton's cookbook is very good, though not 100% correct. I did have to look at the docs for Qmail, Qmail-Queue-Scanner and SpamAssassin to get it fully funtioning. But it was a great place to start. Build a sendmail box to filter for your Novell server. Mercury Mail has to be the worst MTA I've ever seen - we've had a huge increase in reliability and functionality by neutering Mercury as much as possible. At this point the only thing it handles is actual delivery to PMAIL boxes.
