The biggest reason I personally don't like reply-to is that it makes maintaining a cross posting thread really difficult. Now I know cross posting is bad, but sometimes it's necessary, and if one list in the cross-post has reply-to set, it means that list "sucks up" the thread. Also, reply-to set means I tend to make mistakes when trying to do a personal reply. I've gotten used to using "Reply" vs "Reply-All" now in all my email clients - I know what they do and having "reply-to" set breaks that.
