I don't have answers for your first batch of questions, but I can confirm that the whole point of SA is to mark up your message if it's spam and to put in only a polite little header if it isn't. Granted, you're using Outhouse, so it might be trickier to tell, but it should be there. This very message should have an "X-Spam-Level:" header in it with some number of stars (possibly zero).
