I requested this feature. However, Craig stated that it would
be a bad idea to have this in the distribution because users
might turn it off and that would make it hard for us to help
them troubleshoot.

Make sure you're aware of his point before you apply the patch
(http://bugzilla.spamassassin.org/showattachment.cgi?attach_id=95).

Once the patch is applied to your sources, you'll need to add
the following configuration option to your local.cf:
spam_checker_version 0

(This patch also allows the other headers to be turned off.)

Also, keep in mind that if you upgrade SpamAssassin in the
future, you'll most likely need to reapply the patch.

If you aren't sure how to apply the patch, feel free to reply
to me, off-list. I'll need to know how you are installing SA
(CPAN? RPM? apt-get? from source? from cvs?). Also, send the
results of the following command:

locate Conf.pm

(If you get an error message about database being old, run:
updatedb)
