Thanks for everyone's help!   I also found http://i.yak.net/twiki/bin/view/Fnord/SpamAssassinHowtoRedhat72 which looks like it should work perfectly, but I'm having trouble getting the new sendmail.cf file to work properly with SendMail (v8.11).
