You can probably skip the "replace the daemons" part -- make install ought to do that for you assuming you didn't move them to non-standard places. The install will overwrite stuff in /usr/share/spamassassin/, but should leave /etc/mail stuff untouched. So it'll replace your default .cf files, but leave site customizations unchanged (assuming they were properly put into /etc/mail or similar). The upgrade from 2.01 should be pretty much seemless and painless.
