Just did a bit of digging and I found this:

Which if your unable to view indicates:
You have some sendmail sender-rewriting rule which is causing them to
become
non-local.  Probably all "X" are transformed to "X@mailserver".  This
makes
mail sent from that machine appear to come from the mail server machine,
so
that replies will go back to the mail server machine and not to a client
machine, which might be off at the time.  It's a good idea because it
takes
machines other than the mail server out of the mail process as much as
possible.

So my question is this, how or where is SpamAssassin, changing the From
line...
