This really isn't a SpamAssassin question, it's a general Unix sysadmin
question.  I can give you a few bits of advice:

  * use a modern MTA; I like Exim, and I have heard good things about
    postfix.  qmail is also good, but it's weird in many ways.  If you
    have't already invested lots of blood, sweat, and tears in figuring
    out sendmail, don't waste your time on it.

  * never name a machine after the OS it happens to be running

  * plunk down the money for Philip Hazel's Exim book -- I have to
    admit I have't actually looked at it myself, but I bet it's
    a good way to learn how to run a Unix mail server
