Hi Thomas,
as far as I know the only place where the variables are saved is in the SLURM 
state directory as defined by StateSaveLocation in slurm.conf:

Here you will see (for StateSaveLocation=/var/lib/slurm) :

/var/lib/slurm/hash.0
/var/lib/slurm/hash.1
..
..
/var/lib/slurm/hash.8
/var/lib/slurm/hash.9

In each such directory there is a subdirectory for the pending jobs that end 
with the x in hash.x

/var/lib/slurm/hash.0/job.123450
/var/lib/slurm/hash.1/job.123451
..
..

In this directory there are two files - one for the script and the other for 
the environment.

Unfortunately I have no idea how one could display them in a straightforward 
manner.
