I let it go until it goes like smooth cottage cheese,some sea salt mixed in
and it has a mild tangy flavour;good!.I let some go hard and after some
months,when put in fresh milk,it comes back to life very quickly.Otherwise,I
don't use milk,except for a bit in my coffee.
