I have been doing that for some time. I have a 25 gal holding tank and
when it gets about half empty I start it up with the boiler tank 2/3
full of dehumidifier water and it continues automatically till the
holding tank is full. There is a lot less scale in the boiler and I only
have to clean it out every third or fourth time I use it.

There should be no minerals and what you get out of air depends on how
clean air is in house. I would even be saving water not much but it is
water I throw down the drain.
