Since the content of lard is essentially the same independent of the
animal it comes from (mammal that is, fowl is somewhat different), I
suspect that they simply use whatever they can get the cheapest, whether
it be pig, cow or horse.  Once a chemical product is made, the feedstock
is usually irrelevent.
