Well you can tell by the results of using enzymes as the symptoms of gas,
bloating and excrements analysis changes (looks and smell are indicative of
their having worked).

If the stools are smelly the body is not digesting properly.  But taking
enzymes is not the whole answer as one must look at the diet (too many
cooked foods in the diet, too many combined meals like meat and grains (or
starches) and the body runs into problems digesting them.

start.  I have several books on Enzymes and lot of other links etc on
enzymes.

I recommend a fermented salad often for dogs that are sick that includes
enzymes (for this use they just use a mixture as it is handier this way)
though for the fermented salad just Cellulase and Amylase is needed, to
break down the pulp so that the probiotic (good bacteria) can feed and
multiply.  This mixture boost the immune system and helps with constipation
and diarrhea.

  It works both ways. A quick google on 'enzyme depletion'  shows many
  hits, but most of them seem to be selling products to add enzymes to
  your diet. The question is do they really work?

  I know  some people abhor quackwatch, but personally I look  for the
  truth wherever  I can find it. Here is an article pointing  out that
  enzymes are proteins, and are simply digested just like  every other
  protein. So the enzyme supplements don't have any effect:
