New pans do not have the rainbows Terri. It is only from over heating that these develop. Changes the molecular structure of the steel and is supposedly now giving off metal molecules. I don't have the details of this, just read about it years ago. A family that stopped using even SS eating utensils.
Personally I was fortunate enought to recently inherit a set of solid silver ware. We eat off of that every day.
