Hi Dan, Don't worry about sparkes. They are very small particles and wont hurt you.
Where do they come from? If you are using a silver wire, paint the bottom tip with finger nail polish and band the electrode at the waterline, about 1/4" above and below the water line with some form of plastic insulation or nail polish.
