Yes, it would appear so for wine vinegar. I don't know anything about this area so just googled around. It seems that both bacteria and fungus, or a combination are used depending on the application. The original question wasn't about vinegar though. There could be so many things at work here, I'd just be very slow to reach conclusions via a single axis.
