Well, either :
- Do as I did where I worked before and expose all the advantages of using
free software (ssh isn't really, openssh is), and software that is fully
tested on large scales and supported by the distribution you use etc. I
switched 20+ servers to openssh like that ;-)
- Get the /etc/init.d/sshd script from the openssh-server package and tweak
it so that it launches your ssh instead, should work.

Anyway... upgrading openssh with RPMs is smooth and easy, whereas upgrading
ssh installed from sources and restarting it isn't.
