Do you have any idea if there is a way to backup a zvol in the manner you speak
of with bacula? Is DD a secure way to do this or are there better methods to do
this? Otherwise I will just use dd. Thanks again!

Make sure you test booting from the newly attached disk and update the
BIOS, if necessary.
The boot process occurs over several stages. I'm not sure what the
zfs_stage1_5 file provides but is the first two that we need for
booting.
