Yes, with \uselanguage{french}.
(And possibly with some problems with apostrophes. If you don't use
tex-text mapping, you can use \lccode"27="27)

because I have to compile an 'old' french book,
written with plain.
I work with TeXShop on a Macintosh (last distribution).
