If you enable heuristic recognition from the RTP preferences ("Try to
decode RTP outside conversations"), Wireshark will try to guess if
undecoded UDP packets are RTP and if it recognizes them as such will
decode them as RTP.

How can I set up Wireshark to ALWAYS decode UDP Packets with port numbers
