gValve and catalina.out.
catalina.out is controlled by the shell's output redirection and
AccessLogValve writes directly to the log file itself.
If you want to have size-based rolling for your access logs, you'll
have to hack the source.
If you want to roll catalina.out in any capacity

By default, catalina.out is not rotated. It can be done though. See here
