Perfect advice, thanks! It turned out the workspace on my build server wasn't
bring properly cleaned for each build so the final WAR contained a bunch of
5.3.8 JARs too.

Are you sure no old Tapestry's JAR are left in your Tomcat deployment? It
looks like there is an old JAR with Plastic classes somewhere.
