use some PERL, it's really simple. Took me 1 day from scratch to
create monthly stats from an amavis-new log file, including virus
counting and spam ratios.

Ham is everything that is NOT spam.

bayes pretty much catches these, I don't rely only on spamassassin's
default rules, but train bayes with spam from my users (they save
them in a folder, and I run sa-learn once a day to feed bayes).

If you are using postfix, don't use mailscanner, it uses a
non-documented (and therefore not supported) access to the postfix
queue files. Use amavisd-new instead to integrate postfix and
spamassassin.
Anyways, the default rules in spamassassin will NOT get you anything
much than 70% in c
Don't do this from spamassassin, reject messages sent to nonexistent
users from your MTA (postfix, exim4, whatever you use). This will also
lower the backscatter mail volume from your system (sending bounces to
forged sender addresses).
