So I just want to reply back and let you know I found a solution to my
problem
Added a line to the " Session and start up > Application Auto start
tab"
setxkbmap -option ctrl:nocaps
Run at: Log In
viola... No more caps lock turning on by itself.

This is getting wacky,
I just sat down at the computer after being away from it for a little
bit and moved the mouse to be greeted by the YOUR CAPSLOCK IS ON
message.
It's done this twice, randomly today.
Is there a way to disable the capslock key entirely?

I can walk away from my computer and come back after the screen blanks
off and move my mouse and the lock screen will say:
