I had an idea to monitor the filesystem (via inotify or cron script)
and convert the file to mp3 after the meeting. Is there a way to add
this file to OM so it would be visible in OM after the conversion? If
so, that would be good enough for this case.

for interview room OM creates "final" recording using all video pods
for conference/presentation rooms the :final" recording is created from
screen-sharing video and audio streams from room participants
there is no way so far to create audio-only recording
You can use hack: convert mp4
