doubled and you will see 2 users with the same name.

The only option I can propose is "Wait for recording" room option
This way you can remind user to start recording
There is no option to enforce recording

I guess sharing screen possibly will have long delays because your screen
resolution is high and it takes a lot of bandwidth.
But I have not tested myself. But it seems teamviewer works very well.
Possibly the algorithm is different.
