If you select just one file with "Get Info", tell it to use
6.7 and then select the “Change All” it will stick
for all files. I think when you tried to select a
folder full of files “Get Info” became confused.
I had no such difficulties here using Yosemite.

The simplest way I have found is to move the LiveCode 7.0.app to a different
hard drive and remove any copy from the system hard drive, then it will no
longer be the default LC app, but will still be useable.
