This was a driver bug. I can't reproduce it on Oneiric for at least 2
months now.

I have tested with a macbook pro (Nvidia 9600 inside). I can setup a TwinView
between my macbook screen and a 1600x1200 monitor. Unity works fine, but
twinView takes some times to configure. It sometimes refuse to set a
configuration that I know to be working...

I will mark this as invalid, as I suspect a bug in Nvidia TwinView. Re-

We still have the mention of this bug in Nux source code and the fix
that goes with it. To make a test in Nux, I would have to remove the
hack so that upstream can see the bug happen without the fix. Even so, I
am not sure if all the conditions will be there for the bug to be
reproducible outside o

You need to get the Unity and Compiz from the daily PPA. Also, there is
a fix in the fglrx driver, but it has not been loaded into Jockey yet.
However you can get the fglrx driver from the Ubuntu archive.
Here is some information you need:

@Lorenzo
You said the gnome main panel crashes. Are you referring to the Gnome
Desktop? Can you run the Gnome desktop instead of Unity or is it also
crashing?

I have a desktop system NVidia Geforce 6600. After properly updating it today,
Unity runs fine on it.
You have a Geforce 7500, so I don't think your issue is graphics related.
Make sure you have properly update your system and that you don't have
conflicting libraries.

a simple test case for it. I will report the finding in the xorg bug
