That one's easy, some of the PHP libraries that use GD and similar

I'd go for a Debian based solution as that's what I'm most comfortable
with, so of your two it'd have to be Ubuntu (though I wouldn't bother
with Gnome for a webserver, Xubuntu is more than sufficient).
