It's in /boot/grub
There's a file menu.lst
Just comment out whatever you don't want to be offered.

At a guess I would say that you have
Ubuntu
Ubuntu (recovery mode)
Ubuntu memtest
perfectly normal - when you get a kernel update you'll get 2 more
If that is not what you're seeing then can you give us a biot moredetail
of what you're seeing
