How this is done, i.e. which tool is launched to do the work? I'd like
to script something with this to be able to start the screen shot from a
SSH session.

You can try adding a new user too the system. You can do that using
the GUI fi, can him "phablet" as example. Then you can log in to
unity8 with this user and it should have a clean configuration to test
with.

deleting it. Unity8 isn't that much different from Unity7 in terms of
where it stores settings, apps can have their stuff in ~/.cache,
~/.config, ~/.local/share etc.
