an attempt to install mail-notification will pop up the error that
libgmime 2.0.2 is required, but the version installed is libgmime 2.1

It does, and also wants to install libgmime2.2-cil, but everything seems
to install now...is there any reason why these two packages aren't the
default ones installed?

I'm also having this issue, and from the posts I've seen on
ubuntuforums, there are quite a few people running into this problem, as
well.
Everything seems to install just fine, but it appears that the kernel
module doesn't load when the xorg driver loads...so you have to do a
modprobe and restart
I added/updated the following entries in Firefox:
network.protocol-handler.app.email string evolution
network.protocol-handler.external.email boolean true
It still tries to open in firefox, but firefox then opens evolution
