This is caused by the old/broken grub-customizer package which only
exists in Focal. You need to remove that:
$ apt purge grub-customizer

Interestingly enough, this only seems to fail on the live ISO. I'm quite
okay shipping a game that only works once you install the system.

That's an interesting find. I would expect the cache to always match the
installed package/code, because it is generated at post-install time:

Also, even if you selected to update packages during the installation,
and fetch a new ubuntu-pro-client version, that would also run the same
