Also one thing is *weird* to me: if I select another driver than nouveau (using
jockey) it will be installed.
Then after the reboot, if I launch jockey again I don't see nouveau in list
anymore, even reinstalling nouveau* from apt.

No, it doesn't. This bug has several assignees, is full of debugging
information, already triaged, targetted and milestoned, so it doesn't
