We (on the kubuntu-users list) tracked down the root of the problem.
The kaffeine-xine engine is, by default, correctly configured to expect
the audio & video devices to be /dev/cdrom and /dev/dvd, respectively.
udev has two rulesets that are relevant:
/etc/udev/rules.d/70-persistent-cd.rules
Confirmed on Intrepid amd64. I can play a stereo mkv without stutter
but not a surround sound one.
Switching back to stereo makes no difference to the stutter.
Movie plays fine in Totem.
I can play the same movie on totem and also in VLC and totem still does
not stutter so it does not seem to

I have recorded a short selection of me dictating. As you can hear, the
sound is faint, and of poor quality. I also wonder if both channels are
working, but I can't tell on my machine.

The problem is not in any of the printer setup tools. The tools handle
this PPD correctly. The problem are very confusing names and UI strings
for the choices of the "Print Quality" option by Brother. The option
entry in the PPD looks like this:
*OpenUI *CAPT/Print Quality:PickOne
*OrderDependency

that's weird i don't have such behavior in my iPod, you might want to
send this upstream to bugzilla.gnome.org and also attach your ipod
database to that report, since they write the software they should know
