You didn't ask the question if printing to a file worked from evince. You
asked if printing to a file worked correctly (which it does as indicated
above). Opening the .pdf within evince and then saving it (i.e. printing it
to another .pdf file) is not working for me.

Yes. I can open an OpenOffice Write document and save it to a print file,
and then open the print file and print it without any trouble.
The .pdf file works fine under MS-Windows (separate partition), but I cannot
